Oscietra caviar is harvested from the Acipenser gueldenstaedtii. With a grain size exceeding 2.7 mm, it impresses with its characteristic nutty flavor, highly prized by connoisseurs, and a pleasantly firm shell. The taste of this caviar is considered delicate and elegant, yet expressive.
The color spectrum of the caviar ranges from olive green to light brown, gray, and black.
We are fortunate to be able to cultivate the exceptional Oscietra sturgeon in three different countries.
Fifty percent of the natural flavor is defined by the water, the air, the feed, and the sturgeon species itself; the other half is determined by our caviar masters during production through the addition of the precise salt and its concentration.
