A freshwater fish from the same genus as the Beluga, a member of the sturgeon family. Its large, glossy caviar grains, up to 4 mm in diameter, often have a dark gray-green color, which can vary depending on the age of the fish.
The Kaluga sturgeon (Huso dauricus), also known as the "river Beluga," originates from the Amur River in northern China. Like its cousin, the Beluga (Huso huso), Kaluga caviar is considered one of the most sought-after caviar varieties thanks to its rich and complex flavor.
