Baerii caviar, with a grain size of at least 2.0 mm, is harvested from the Acipenser baerii. It is fine-grained and known for its robust, elegant flavor and exquisite, smooth, and clean finish.
Its colors range from black and gray to dark brown.
We are fortunate to be able to farm the exceptional Baerii sturgeon in two different countries.
Fifty percent of the natural flavor is determined by the water, air, feed, and the sturgeon species itself; the other half is precisely controlled by our caviar masters during production through the addition of the correct salt and its salinity.
The sturgeon for our German Baerii caviar are raised on our farm in Fulda, which is supplied with fresh well water. We draw this water from deep underground and pipe it into the ponds. From there, we release the water into the Fulda River, which then flows towards Hann. Münden where it joins the Werra River and continues on to the North Sea.
